Campfire cooking in the Wicklow Mountains

It was a really nice February day and it was Poppy’s first campfire lunch. At 8 months old I think she enjoyed it as you can hear her singing a lot in the video.

For lunch we had sirloin steak served with sweet potatoes, grilled sweet peppers and a bundle of roast veg which included courgettes, leaks & tomatoes cooked in some tinfoil and seasoned with salt and peper and some coconut oil. Cook the potatoes in there skins which will char on the outside. Use a knife to see when they are done by sticking it in the side of the potato. If it goes in nice and easy they are done. Rotate the spuds that are ready to the outside of the fire and move those needed a bit more time into the middle.

The steaks were cooked on the grill but we did one on the coals and it actually tasted better than the grilled ones. Steaks were seasoned with salt and pepper. We had ginger and lemon tea to wash it all down.

The tarp fail was more of a human fail than the tarp. I’m new to tarps and it wasn’t up very well and the wind changed direction from when it was pitched and it just acted like a parachute. Need to practice tarp set up but we didn’t really need it that day because the weather was so good.
