Cut your fillet into a size that will fit on your bun and roll it in your seasoned flour. Mix your chopped dill into your breadcrumbs. Dip your fillets in your egg wash, gently shake off excess egg then roll in the breadcrumbs till fully covered and set aside.
Thinly slice your red pepper and your onion. Heat your frying pan (medium to high heat) and add some olive oil. Add your peppers, onions and balsamic vinegar and season. Cook till nice and tender and just before the they are cooked add your brown sugar and cook for another 30-40 seconds until glazed and set aside in a bowl.
Take your mayonnaise, pesto and lemon juice and combine in a bowl.
Put your potatoes in a pot of cold water and bring to the boil and parboil. Remove from water before they get soft and let cool before slicing into thin slices (4mm). Add some olive oil to your pan and add your potatoes, garlic, chopped oregano and seasoning. Add a knob of butter near the end and cook until golden brown and set aside in a bowl with a cover to keep them warm.
Add some more olive oil to your hot pan and once hot add your fillets. Cook for about 4 minutes on each side (time will vary depending on the thickness of your fish) on a low to medium heat to avoid burning your breadcrumbs before the fish is cooked. Add some knobs of butter to the pan near the end and cook both sides until they are golden brown.
Cut your baps in half and while the pan is still hot use the cut side to mop up the juices in the pan and lightly toast the bread. It's time to build your sandwich now. Add some rocket to the base and top with your Swiss cheese. Next place your hot fillets on and top of the cheese and smother the fillets in your lovely glazed onions and peppers. Add your pesto mayo to the top bun and your sambo is ready to go.
